Recipe for Corsican Courgette Fritters

Let yourself be seduced by these crispy, deliciously flavored Corsican zucchini fritters, and bring a touch of authenticity to your table with our authentic recipe. Inspired by the island's sunny flavors, this recipe lets you recreate a classic Corsican dish at home, ideal for delighting the taste buds of your guests.

Ingredients for approx. 30 fritters

  • 2 medium-sized zucchinis
  • 250g t55 wheat flour
  • 3 eggs
  • 15cl milk
  • 1 tablespoon olive oil
  • 1 sachet baking powder
  • 1-2 cloves garlic
  • 2-3 sprigs flat-leaf parsley
  • 6 mint leaves
  • Salt and pepper
  • Oil for frying

Preparing the fritters

(Total time: 1h06 = Preparation: 1h + Cooking: 6 min)

Step 1: Finely grate the zucchinis and season with a pinch of salt. Leave to drain for 1 hour in a colander and squeeze out excess water.
Step 2: Crush the garlic and chop the parsley and mint.
Step 3: In a large bowl, mix the flour, baking powder and beaten eggs, then add the grated zucchinis, mint, parsley and garlic. Season with salt and pepper and mix well to obtain a homogeneous paste.
Step 4: Heat the oil to 160°C. Using a large spoon, drop small mounds of dough into the oil and brown the fritters well on each side.
Step 5: Place the fritters on paper towels and serve.

Tasting

Serve hot, with a yogurt-herb sauce or a simple slice of lemon.

Storage

If you haven't finished your doughnuts, you can store them in an airtight tin in the fridge for 24 hours, but you'll lose the crunch and light texture.
