Recipe for Corsican Flan with chestnut flour

Ingredients for 6 people (mold ⌀ 25cm)

  • 1 L whole milk
  • 4 eggs
  • 200g sugar
  • 125g chestnut flour
  • 1 vanilla pod
  • ½ tbsp orange zest
  • 2 tablespoons amber rum
  • liquid caramel (optional)

Preparing the Flan

(Total time: 1 h 10 min = Preparation: 30 min + Cooking: 40 min)

Step 1: Preheat oven to 210°C.
Step 2: In a saucepan, pour 3/4 of the milk with the split vanilla pod and ½ tbsp orange zest, then bring to the boil over low heat.
Step 3: Dissolve the flour in the remaining milk.
Step 4: Beat the eggs with the sugar until frothy.
Step 5: Strain the hot milk and stir into the flour-milk mixture, then return to a simmer for 10 minutes, stirring until thickened.
Step 6: Pour this mixture over the sugar/eggs mixture, add the rum and stir.

Step 7: Pour the flan mixture into the mould and bake in a bain-marie for 40 minutes.
Step 8: Leave your flan to cool, then place in the fridge for at least 4 hours, or ideally overnight.

Storage
