Recipe for Cucciole from Calenzana (Corsica)

Ingredients for 6 people

  • 300 g white flour
  • 200 g corn flour
  • 125 g caster sugar
  • 1 teaspoon baking soda
  • 7.5 cl olive oil
  • 5 cl sunflower oil
  • 12 cl white wine
  • 2 cl brandy

Preparing the Cucciole

(Total time: 35min = Preparation: 15min + Cooking: 20min)

Step 1: Add the two flours, sugar and bicarbonate to a bowl and mix.
Step 2: Then add the white wine and oils and mix.
Step 3: Add the brandy and mix again to obtain a homogeneous dough.
Step 4: Roll out the dough to a thickness of 1 cm and cut out lozenges.
Step 5: Preheat the oven to 180°C.
Step 6: Place the lozenges on a baking tray lined with baking parchment.
Step 7: Bake for 20 minutes.
Step 8: Remove the baking tray from the oven, place the cucciole on a wire rack and leave to cool.

Storage
