Recipe of Canistrelli: delicious Corsican cookies

The Canistrelli! These delicious Corsican cookies that you can eat endlessly and at any time! On our island it is a small cake which we find everywhere, we all like it and that since very small.

I still remember my mother making the plain canistrelli, with lemon, aniseed, almonds, chestnut flour and so on, I really had the chance to taste everything, and I don't talk about the smell in the room! There are many recipes for canistrelli in Corsica, that's why, I'm going to give you the family recipe (be careful, it's top secret!), it's really very simple to make, I hope it will make happy people at home. Ingredients for ~ 35 canistrelli

  • 500g of flour (T55) 
  • 90g white sugar
  • 90g brown sugar
  • A pinch of salt
  • 12cl of olive oil
  • 12cl of white wine
  • 1 sachet of baking powder
  • Powdered sugar (powder or crystal) for coating

Optional:

  • For the almond version: Add 100g of whole almonds.
  • For the lemon version: Add 2 lemon peels.
  • For the anise version: Add 75g of anise seeds.

Preparation of the dough

(Total time: 30 min = Preparation: 10 min + Cooking: 20 min)

Step 1: Preheat your furnace to 180 °C.
Step 2: Mix the flour, white and brown sugar, salt and baking powder.
Step 3: Add the olive oil and then the white wine.
Step 4: Mix well to obtain a nice smooth ball of dough.
(Optional: add your almonds or lemon peel or anise seeds and mix again)
Step 5: Spread the dough to a thickness of 1.5cm to 2cm (depending on your taste).
Step 6: Using a roulette wheel or a knife, cut out rectangles, squares or diamonds.
Step 7: Place them on a sheet of baking paper and sprinkle them with powdered sugar (powder or crystal).
Step 8: Bake at 180°C for 20 minutes (they are cooked once they are golden brown).
Step 9: Take the canistrelli out of the oven and leave to cool for 15 minutes (Don't eat them all at once!).

Tasting

The canistrelli can be served at any time of the day, for breakfast, dessert, snack, coffee, tea, etc....

Conservation

You can keep them in an airtight box in a dry place for 2 weeks. (If you can!)

Un grand merci pour cette excellente recette.... ici tout le monde s'est régalé. J'ai testé à l'anis (mais en n'en mettant que 25g ; pour nous c'est suffisant) et les amandes que j'ai concassées. Par contre, j'ai réduit la quantité de sucre à 70g de chaque et c'est parfait.....

EXCELLENTE RECETTE PAR CONTRE J AI MIS UN PEU PLUS DE VIN BLANC ET D HUILE SOIT 15 CL A LA PLACE DE 12 CL ET 50 G D ANIS A LA PLACE DE 75 G
