Recipe for Corsican Fugazzi

Ingredients for 6 people
- 500 g white flour
- 150 g caster sugar
- 12 cl extra-virgin olive oil
- 6 cl Pastis
- 6 cl dry white wine
- 1 pinch salt
Preparing the Fugazzi
(Total time: 1h20min = Preparation: 1h + Cooking: 20min)
Step 1: Preheat the oven to 180°C.
Step 2: Add the flour, sugar and pinch of salt to a mixing bowl and stir.
Step 3: Gradually add the oil, pastis and dry white wine.
Step 4: Knead the dough until it is supple, completely smooth and forms a ball. (It should be neither sticky nor too dry.)
Step 5: Wrap the dough in cling film and refrigerate for 45 minutes.
Step 6: Next, roll out the dough on your work surface to a thickness of between 0.5 cm and 1 cm.
Step 7: Using a cookie cutter of your choice, cut out your cookies from the dough.
Step 8: Place them on a baking sheet lined with baking parchment and prick them with a fork.
Step 9: Sprinkle with sugar if desired and place in the oven for 20 to 30 minutes, depending on your oven and taste.
Step 10: Remove from the oven and leave to cool for at least 30 minutes before tasting.
Tasting

Storage
If you haven't finished your fugazzi, you can store them in a non-hermetic tin. If you want to keep them crunchy, don't hesitate to layer them with paper towels.
