Recipe for Bastelle Corse - Chard and Brocciu

This Corsican specialty is an excellent example of local cuisine, highlighting the island's regional ingredients and culinary traditions. If you have the opportunity to visit Corsica, I recommend you try bastelle to discover the island's delicious cuisine. These little stuffed turnovers are a veritable explosion of flavors. Variations on the recipe can exist from one family to another, adding their own personal touch. Today, I've decided to share with you our version of bastelle with chard and brocciu. Ingredients for 6 people

  • 500 g white flour
  • 700 g chard
  • 300 g brocciu
  • 1 large onion
  • 2 eggs
  • 10 cl olive oil
  • 10 cl warm water
  • salt and pepper

Bastelle preparation

(Total time: 1h20 = Preparation: 1h + Cooking: 20min)

Step 1: Add the flour, olive oil, water, 1 egg and a pinch of salt to a bowl, then mix with your hands to form a smooth but firm ball of dough. (Add more flour or water if necessary).
Step 2: Shrink-wrap your dough and chill in the fridge for at least 1 hour.
Step 3: During this time, chop the chard and onion.
Step 4: In a hot frying pan, add a drizzle of olive oil and sauté the chard and onion, seasoning with salt and pepper, then set aside in a bowl.
Step 5: Leave to cool, then add the brocciu to make the filling.
Step 6: Preheat your oven to 180°C.
Step 7: Take the dough out of the fridge, cut into pieces and shape into small balls 4 to 5 cm in diameter.
Step 8: Roll out the balls thinly, about 2mm thick, to form circles.
Step 9: Place a tablespoon of filling on the top half of the circle, leaving a small margin.
Step 10: Brush a little egg yolk around the edges and close your turnovers, flattening the edges with a fork.
Step 11: Place your turnovers on a baking tray lined with baking paper.
Step 12: Brush your turnovers with the last of the egg yolk.
Step 13: Bake for 20 to 30 minutes, depending on your oven. When you get a nice golden color, it's ready.

Corsican bastelle are versatile and can be enjoyed at any time of day. Whether as an aperitif for an authentic sharing experience, as a starter for a taste of Corsica, or even as a main course with a fresh salad, they're perfect anytime.

Storage

If you haven't finished your bastelle, you can store them in an airtight box in the fridge for 24 hours.
