Recipe for Corsican peasant cake

Torta is a Corsican chocolate cake, much appreciated by children and adults alike at family celebrations in Corsica. It is often the centerpiece of birthday celebrations. But the Corsican Torta is much more than just a dessert. It's a symbol of family togetherness, a celebration of life and shared happiness. Easy to prepare, this recipe is a perfect choice for those looking for quick cuisine that combines taste and quality. Today, I'd like to introduce you to the recipe for torta corse paysanne. Ingredients for 6 people (mold ⌀ 18cm)

For the sponge cake:

  • 4 eggs
  • 120g sugar
  • 120g flour, sifted
  • 5.5g baking powder (½ sachet)
  • 1 lemon zest

For the chocolate topping/decoration :

  • 75g dark chocolate
  • 75g milk chocolate
  • 10g grape seed oil
  • Multicolored vermicelli

Preparing the Torta Corse Paysanne

(Total time: 1h to 1h20 = Preparation: 40min + Cooking: 20 to 40min)

Step 1: Separate the whites from the yolks in two bowls.
Step 2: Mix the yeast with the flour in a bowl.
Step 3: Place the egg whites in the bowl of a food processor and whip until stiff.
Step 4: When the whites begin to foam, add the sugar and whip until the meringue is glossy and firm.
Step 5: Immediately add the egg yolks and flour. Don't let the food processor run too long.
Step 6: Pour the batter into a ⌀ 18cm, buttered and floured cake tin.
Step 7: Preheat your oven to 180°C and bake for 20 to 40 minutes, depending on your oven and tin. (Keep an eye on the color of your sponge cake from 20 minutes onwards, but don't open the oven).
Step 8: Let it cool completely and unmould the sponge cake onto a cake tray.
Step 9: In a large glass bowl, add the milk chocolate and dark chocolate and melt in the microwave, then add the grapeseed oil.
Step 10: Mix to a smooth consistency and pour over the top of the sponge cake, coating the sides generously with chocolate.
Step 11: Decorate your torta corse with the multicolored vermicelli.

Storage

If you haven't finished your torta corse, you can store it at room temperature in an airtight tin of the right size for 2 days.
