Recipe for Corsican Brocciu Doughnuts

Ingredients for about 25 fritters
- 250 g flour
- 250 g brocciu
- 8 g baker's yeast
- 60 g sugar
- 1 egg
- 5 cl warm water
- 10 cl milk
- zest of half a lemon
- pinch of salt
- sugar for coating
Preparing the doughnut mixture
(Total time: 3h20 = Preparation: 3h15 + Cooking: 5 min)
Step 1: Mix the warm water, baking powder and 10g sugar in a bowl.
Step 2: Add 25g flour, mix well, then cover and leave to stand at room temperature for approx. 1h30.
Step 3: Add the egg, 50g sugar, the zest of half a lemon, the 225g flour, a pinch of salt and the 10cl milk. Mix until smooth. Cover and leave to rest at room temperature for a further 1h30.
Step 4: Cut the brocciu into small cubes.
Step 5: Heat the oil in a deep fryer or saucepan to 170°C. Using two oiled tablespoons, take a cube of brocciu and a little batter, shape into small balls, then gently slide them into the hot oil. Fry until golden brown on both sides.
Step 6: Drain the fritters on kitchen paper, roll in sugar and serve immediately.
Tasting
Serve hot, with coffee, tea or a glass of lemon liqueur (Corsican limoncello).
Storage
If you haven't finished your brocciu fritters, you can store them in an airtight tin in the fridge for 24 hours. However, they will lose some of their texture and flavor, so I recommend that you eat them quickly.
