Recipe for Corsican Brocciu Lasagne

Let yourself be seduced by a delicious revisitation of this great Italian classic, enhanced by brocciu, a light-textured Corsican cheese with a delicately fragrant taste. Our lasagne with brocciu combines tradition and originality for a dish that's both gourmet and refined, transporting you to the heart of the Isle of Beauty. Each layer of fresh pasta contains a delicious blend of melting brocciu, chard leaves and aromatic herbs, creating a perfect balance between creamy and crispy. Lighter than classic lasagne, they add a touch of freshness while remaining resolutely gourmet.

Ingredients for 5 people

  • 12 sheets fresh or dried lasagne
  • 500 g brocciu
  • 500 g chard leaves
  • 1 bowl breadcrumbs
  • 2 eggs
  • 3 cans peeled tomatoes
  • 1 tbsp. tomato paste
  • 25 cl water
  • 25 cl crème fraiche
  • 100 g grated sheep's tomme cheese
  • 2 onions
  • 2 cloves garlic
  • cold milk
  • olive oil
  • fresh parsley and mint
  • maquis herbs
  • salt and pepper

Preparing the dough

(Total time: 1h30 = Preparation: 1h + Cooking: 30 min)

Step 1: Blanch the chard leaves in boiling water, then leave to drain for 24 hours in the fridge.

The next day..

Step 2: Drain the brocciu, place in a bowl and mash with a fork.
Step 3: Finely chop the onions, garlic, parsley and mint, then set aside.
Step 4: Soak the breadcrumbs in cold milk to make a soft dough.
Step 5: Stir the drained chard leaves into the brocciu, then add a few herbs, parsley, half the garlic and onion, the two eggs and the moistened breadcrumbs.
Step 6: Mix the stuffing thoroughly and set aside.
Step 7: In a saucepan, lightly fry the remaining garlic and onion with a drizzle of olive oil.
Step 8: Then add the peeled tomatoes, the tablespoon of tomato paste, the water, a little parsley and mint, and season with salt and pepper. Mix well.
Step 9: Allow the tomato sauce to reduce to a coulis consistency.
Step 10: In a dish, spread a first layer of tomato sauce on the bottom, then arrange three sheets of lasagne, followed by a layer of tomato sauce and filling. Repeat the operation, layering several layers on top of each other.
Step 11: Finish by pouring the liquid cream over the top, add the grated ewe's milk tomme and bake for 30 minutes at 200°C.

Please note that the cooking time is a guide only, as it may vary according to your oven, the type of lasagne (fresh or dry) and its thickness.

Tasting

You can accompany this brocciu lasagne with a green salad and a glass of Corsican red wine for a complete and tasty meal.

Storage

If you haven't finished your lasagne, you can store it in an airtight tin in the fridge for up to 48 hours.
